What could be more “queer” than to treat physical conditions as social constructs and smash through the meaning of labels? If people can identify as fat or thin then the Theory would seem to be that both concepts would become culturally meaningless and fat phobia would go away — just as sexism disappears once the binary division between the labels of male and female is queered.

True; however, he identifies as a weight (275 pounds) he is not. 275 pounds is in the “obese” or “severely obese” range for all but the extremely tall (which is also a spectrum, of course).
