Some good person YouTube has pinned down the performer: ‘it is played by Hannes Kästner on the renovated “original” Schuke-Organ in the Thomaskirche in Leipzip where Bach played it himself, just a few hundred years earlier. It was released on a CD called “Orgelwerke aus der Thomaskirche”.’
It is certainly the best performance of the piece I have ever heard. It dances throughout, and is never muddy.
I’ve sung in that church. As I recall (although it might have been a different one) the organ has nearly a second delay between pressing the keys and generating sound. Our organist was unfazed. :-)

Ah, according to wikipedia the Schuke organ was removed before I was there.
I love it. I swear I have a better version on CD though (you’ll have to take my word for it ;-) ).
The other “pop” Bach I can’t get over is the unfortunately named “Air on a G String” (3:50) (the inspiration for A Whiter Shade Of Pale).
